Why Vardad

Vardad is Romansh for truth. Truth is what a kitchen owes the inspector, the accountant and the guest with an allergy: a single account of what is on the plate, and of who stands behind it. In Vardad, everything derives from a single recipe, entered once — allergen declarations, food cost, HACCP records, the daily close and the export your accountant receives. Nothing is estimated twice, and nothing is declared that the recipe cannot prove.

One recipe · Every record.

How it works

Enter a recipe once.
Everything else follows.

Every other tool makes you maintain the same data five times. In Vardad, the recipe is the single source of truth — and the system does the rest.

Allergen declaration

All 14 declarable allergens, derived from your ingredients and confirmed by your chef. Print-ready for inspection.

Contains: crustaceans, gluten — printed in all 5 languages

Live food cost

Recalculated the moment you update a price or import a supplier invoice. You see margin erosion the day it starts.

AI advisor

The AI reads the same data — costs, sales, weather, reservations — and tells you what matters.

“Your Gambas margin dropped 4 points this week.”

Change the recipe and everything above updates itself. That is the point of entering it once.

Swiss compliance

When the inspector arrives, you hand them your phone.

CHF 40'000

Self-control is mandatory (Art. 26 LMG). Breaching it can cost up to CHF 40'000, and up to CHF 20'000 even through negligence (Art. 64 LMG, SR 817.0).

No binder shuffling. No missing pages. Every check timestamped.

The AI layer

An advisor that knows your restaurant by heart.

Not a chatbot bolted on top — the AI reads the same recipe, cost, sales and reservation data the rest of the system runs on. A day with Vardad:

The math

Start in the kitchen. Retire tools when you're ready.

One point of food cost can be worth more than the subscription. Start there. When you are ready, Vardad can replace the rest of the stack too.

Your numbers, not ours

Two sliders. See what a point of food cost is worth in your kitchen.

Illustrative — your menu sets the real target. Vardad shows the true number per dish, live.

Questions chefs actually ask

Do I have to replace my till?
No. Start in the kitchen: Vardad Basic runs next to any POS. If you later want one system for everything, Pro replaces the till, reservations and scheduling when you are ready.
What if Vardad disappears?
Your data is yours and exports at any time: recipe cards, allergen declarations and HACCP reports as PDF, temperature logs as CSV. There is no minimum contract period.
Does it work when the WiFi drops mid-service?
Partly. Orders taken on a waiter's device, recipe edits and clock-ins are kept on the device and sync when the connection returns. The kitchen screen sees those orders once that device is back online, and HACCP checklists need the connection.
How long does setup take?
The account takes 15 minutes. Your recipe book takes as long as your recipe book: with AI photo import, a core menu of 20 dishes can be in within a week. From day one, every recipe you add generates its allergen sheet and its cost.
Is my data safe — and is it mine?
Your database is hosted in the EU (Ireland) and isolated per restaurant, and access is limited by role. Your data is yours: you can export it at any time. Vardad is a support tool: you stay in control of, and responsible for, what you publish.
We're not very technical. Will the team manage?
It was built by a chef for kitchen hands, not IT departments. If your team can use WhatsApp, they can use Vardad. Big touch targets, five languages, and nothing important hidden behind menus.
What does the AI actually do — and what does it not do?
It reads your own data: recipes, costs, sales, reservations, weather. It briefs you, imports recipes and invoices from photos, and answers questions. When it imports, it proposes allergens from the ingredient names — a chef checks and confirms them. It never replaces your judgement on food safety.

Your recipes already run the kitchen.
Let them run the business.

Send one recipe to the founder on WhatsApp. You get back its allergen sheet and true cost, as a draft for your chef to confirm. Or book 15 minutes and see your own dish in the system.
